I have eaten a lot of porridge over the past few weeks and now, with confidence, I can tell you how to make the perfect porridge.
You need groats, you need to roll them yourself and then all you do is cook the rolled oats gently with a bit of water and then milk, stirring regularly and then serve with a generous pinch of sea salt and brown sugar. That is all and it is perfection.
I bought the mill from Skippy Grain Mills and it is excellent. It looks so lovely that I leave it permanently attached to my kitchen table which makes rolling a handful of groats very accessible. As soon as you have to dig around the dark recesses of corner cupboards to find a bit of kitchen machinery, you may as well take it to the tip. I bought the groats online from Kombu Whole Foods. Perhaps it is my Scottish roots, but I cannot believe how good a simple thing like a bowl of plain porridge can be. And the daily rolling ritual is a joy.
